Cinco de Mayo is coming. This simple rice pilaf makes a great side dish for grilled meats, and it is vegan so it can work as a hearty dish foe those who don't eat meat. I love the smooth flavor that the Tomato Bliss Green & Yellow Heirloom tomatoes give the dish. It is not spicy, so it will suit most people's palates. I like extra spicy so trust me I have a bottle of hot sauce just out of frame for later..
The farmers market in Pleasantville, New York had wild garlic available so I used that but you could use plain garlic just as easily.

16 oz jar Tomato Bliss Clarified Tomato Broth

16 oz jar Tomato Bliss Green & Yellow Heirloom Tomatoes

2 cups
long grain rice

2 tablespoons
vegetable oil

1.5 teaspoons
cumin, ground

1/4 cup
wild garlic bulbs, leaves for garnish

1 handful
cilantro, chopped

salt & pepper
Directions

Heat 2 tablespoons of oil in a heavy pan.

Add 2 cups of rice to the pan and sauté gently for two or three minutes.

Add the wild garlic bulbs, cumin, salt and pepper to the pan.

Add the Tomato Bliss Clarified Tomato Broth and Green & Yellow Heirloom Tomatoes to the pan and give it a good stir.

Cook for 12 to 15 minutes on medium heat, giving the rice a stir from time to time. If the rice seems to be getting too dry you can add a little more broth (or water).

When the rice is done garnish with chopped cilantro and wild garlic leaves.
