Adapted from Fed By A Frenchman's recipe. It's on the very sweet side, almost like a cake, so a small serving goes a long ways. When making it I reduced the sugar amount in the potato mixture but I may reduce it more next time to a 1/4 cup. —Melissa P
Ingredients

mashed yams

stick salted butter at room temperature

1/2 teaspoon
vanilla extract

1/4-1/2 cups
white sugar

1/2 cup
milk (preferably whole)

eggs, beaten

1/3 cup
flour

3/4 cup
light brown sugar

1 cup
chopped pecans
Directions

Use pressure cooker to cook sweet potatoes. After 20-30 minutes they should be done. Transfer to casserole dish. Add 1 stick of butter cut into small cubes. Mash.

Add vanilla extract, milk, sugar, and eggs to potatoes. Mix together.

In a separate bowl melt the remaining butter in the microwave. Add flour, brown sugar, and pecans. Combine. Mixture will be crumbly. Use this to top potatoes

Bake at 180°C for 35-40 minutes. Bon app!
