Pani puri recipe with easy step-by-step video. Pani puri is a popular street food of India, where crispy fried dough balls (puri) are stuffed with potatoes, sprouts, spicy tangy water, or sweet chutney.

Poori for Pani Poori: Add Rava, maida, salt to a mixing bowl and gradually add water and make a hard dough. Knead the dough for at least 5 minutes, cover with a wet cloth and rest for 30 minutes.

Green Chutney/Putina Chutney: Add mint leaves, coriander leaves, green chilies, ginger, pepper powder, cumin powder salt, and lemon juice to a blender. Add the required water and grind in a soft paste. Pass it through a filter, then add more water.

Tamarind chutney: Soak the tamarind with water for 15 minutes and squeeze the pulp, add it to a pan, and also add dates, jaggery, chili powder, and salt as needed. Boil for a while. When it thickens, turn off the heat and let it cool. Grind it well in a paste and set it aside.

Divide the dough into 2 parts and roll thinly. Cut circles and fry in medium hot oil. Fry until crisp/golden.

Pani Puri Masala Making: Add the potatoes to a mixing bowl and press well. Then add the cooked chickpeas, cumin seeds, chili powder, salt, chopped onions, coriander leaves, and mix well.

Assembling: Crack on top of puri and add potato masala then add tamarind chutney and dip it in pudina water and enjoy the Pani Puri
