Ingredients
  • 3/4 cup gluten-free 1-to-1 flour blend
  • 3/4 cup white sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/8 cup smooth peanut butter
  • 1/3 cup canola or vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup vanilla almond milk (or other plant based milk) (if using original flavor milk, add some extra vanilla extract!)
  • 1/2 cup chocolate chips - divided
Directions
  1. Preheat oven to 350° F.
  2. Line or grease an 8x8 inch baking pan.
  3. Mix flour, sugar, cocoa powder, salt, and baking powder.
  4. Add peanut butter, oil, and vanilla. Mix well.
  5. Add the almond milk 1/4 cup at a time and mix until a consistent batter is formed.
  6. Stir in 1/4 cup of the chocolate chips.
  7. Pour into the prepared pan, and sprinkle the remaining chocolate chips on top.
  8. Bake for 25 minutes or until fork poked into the brownies comes out clean. Let cool, cut into pieces, and enjoy!
