Chickpeas are the secret ingredient in this delicious, gluten-free blondie recipe. No refined sugars or dairy either!

Ingredients

15 oz. can of chickpeas, drained and rinsed

1/2 cup
creamy peanut or almond butter

1/3 cup
maple syrup

banana
-
1 cup
old fashioned rolled oats

2 teaspoons
vanilla

1/2 teaspoon
salt

1/2 teaspoon
baking powder

1/2 teaspoon
baking soda

1/2 cup
chocolate chips (vegan available in most stores)

flakey salt for topping
Directions

Preheat over to 350 degrees and spray 8 x 8 in. pan with nonstick cooking spray

In food processor, add all ingredients except chocolate chips. Process until smooth.

Add most of the chocolate chips, reserving a handful to sprinkle on top.

Spread batter evenly in pan and sprinkle reserved chocolate chips on top

Bake for 23 to 25 minutes (edges should be slightly browned and toothpick inserted should come out clean).

Remove from oven and sprinkle with flakey salt. Let cool for about 15 minutes.
