This recipe was modified from my mother to make it not only delicious but also nutritious. Including ingredients such as flax, wheat germ, whole grain flour and vanilla improve quality without the sacrificing taste! From a registered dietitian nutritionist and mom, I hope you enjoy this as much as our family does! overripe bananas, mashed

expeller pressed canola oil

Eggs, beaten

vanilla extract

Whole wheat white flour

ground flax

1/4 cup
wheat germ

1/2 cup
finely ground walnuts (omit for nut allergies)

1 teaspoon
baking soda

1/2 teaspoon
salt

1 teaspoon
cinnamom
Directions

Preheat the oven to 350 degrees. In a medium sized bowl, mash the bananas. Then add the sugar, oil, eggs, vanilla and stir.

In a separate medium sized bowl, combine the dry ingredients: flour, flax, wheat germ, walnuts (I grind them in a mini food processor, but you could also leave them chopped if preferred), baking soda, salt and cinnamon.

Mix the dry ingredients into the wet. Then, pour into greased loaf pan. Bake in preheated oven for about 55 minutes until inserted toothpick comes out clean. Enjoy!
