Archie & Betty's Healthy Strawberry Parfait

I loved reading Archie comics as a child. I couldn't wait to see what antics Archie, Veronica, Betty, Reggie and Jughead were up to. I loved it best when they met up at the Chocklit shop with Pops serving them ice cream sundaes, parfaits and other goodies.

My retro revival recipe is a Strawberry parfait that I imagine Archie and gang must have eaten countless times from the 1950s to date. The traditional parfait version would have been a frozen cream dessert made with sugar syrup folded into whipped cream. Delish... but not too healthy. But who was counting calories back then, anyway? Right?

My version is a healthy twist on the original, where thick Greek yogurt replaces the cream, and honey replaces the sugar syrup. So quick and easy to make, this is a perfect one serving breakfast item for yourself or you can easily increase the quantity and make this for a larger gathering. A great item for a brunch menu, this is sure to evoke oohs and aahs from your guesets.

Note: The recipe below is for a single serving/ person.

If serving this for a group of friends for brunch, just prepare these parfaits ahead of time in individual glass cups and refrigerate until it's time to serve. Just before serving, top each off with granola and honey and your guests will be amazed at your hostess skills.

What You'll Need
Ingredients
  • 1/2 cup Plain Greek yogurt or yogurt of your choice, stirred
  • 3 Strawberries sliced
  • 1 teaspoon Granola of your choice
  • 1 teaspoon Honey
Directions
  1. Spoon a teaspoon of Greek Yogurt into a mini glass trifle dish.
  2. Arrange sliced strawberries carefully against the wall of the glass trifle dish.
  3. Spoon yogurt into the center of the dish, alternating with a few slices of strawberries.
  4. Just before serving, top it off with granola clusters and a drizzle of honey.
