Baked butter beans with tomatoes and thyme is one of my favorite simple and comfort meals that you can put together in 5 minutes, place it in the oven and have a glass of wine and snacks while the magic is happening inside the oven. —Madona Giorgadze

Ingredients
  • 4 cups butter beans, drained and rinsed
  • 6 small tomatoes, cut in half
  • 4 garlic cloves, cut in half
  • few sprigs of thyme
  • 2 tablespoons olive oil
  • salt, pepper, chili flakes, to taste
Directions
  1. Preheat the oven to 375 F
  2. Make sure the beans are well rinsed if you are using the canned beans. Place them in a baking dish.
  3. Add Tomatoes, garlic, thyme, salt, pepper, drizzle the olive oil, cover and put the dish in the oven for at least 45-50 minutes. Garnish with fresh thyme and chili flakes.
