Halibut with Tomato Bliss Oven Roasted Heirloom Tomato Cream

A super simple and versatile sauce to use with a variety of fish.
I had halibut so I pan seared that, but it would work well with cod or salmon. —Tablecollective

What You'll Need
  • 1 16 oz jar Tomato Bliss Original Oven-Roasted Tomatoes
  • 1 cup heavy cream
  • 3 tablespoons lemon juice
  • 1 1/2 tablespoons tarragon, chopped
  • salt & white pepper
  1. Drain the jar of Tomato Bliss Oven -Roasted Tomatoes.
  2. Roughly chop the tomatoes and measure to make 1 cup.
  3. Add lemon juice and tarragon to the chopped tomatoes.
  4. Whip the heavy cream to stiff peaks.
  5. Fold tomato mixture in to whipped cream. Season with salt and white pepper to taste. Serve chilled with fish.
