Upma, uppumavu, or uppittu is a dish from the Indian subcontinent, most common in South Indian, Maharashtrian, and Sri Lankan Tamil breakfast. It is usually made with semolina (called Rava or suji in India). cooked as a thick porridge from dry roasted semolina. Ingredients
  • 1/2 cup golden bansi rava/ sooji
  • 1 tablespoon ghee/ oil
  • 1/4 tablespoon mustard
  • 1/2 tablespoon chana dal
  • 1 tablespoon urad dal
  • 5-8 pieces ashews halved and cleaned
  • 1 sprig curry leaves
  • 1 onion chopped small
  • 1 green chilly slit
  • 1/2 tablespoon ginger very fine chopped
  • 2 cups water
  • 3-4 drops Lemon juice
  • Handful Little chopped fresh green coriander
Directions
  1. Take a pan add oil/ghee, add urad dal, chana dal, mustard, cashews. Fry until it turns golden. Add onions, ginger, curry leaves, and green chilly. Stir and sauté for 2 mins. Add Golden Bansi Rawa and roast it for 1-2 minutes.
  2. Pour lukewarm water and salt as per taste. Bring the water to boil and stir the Golden Bansi Rawa in the water, to avoid lumps.
  3. Cover and cook on a low flame until the water evaporates. Which might take 3-4 minutes. Add lemon juice and mix well. Sprinkle coriander and serve hot.
