Ingredients

free-range eggs

1 cup
sugar

1 cup
all-purpose flour

1/3 cup
cup cornmeal

1 teaspoon
baking powder

Vanilla extract to taste

1 cup
black currant

Oil to grease
Directions

Crack eggs into a deep bowl (you can use a stand mixer). Add sugar, vanilla extract, and beat until sugar is completely dissolved (2-3 minutes).

Sift both flours into a bowl with eggs, add baking powder, and beat again until smooth. You will have a liquid dough.

Preheat oven to 180 C (350 F). Grease baking pan. Pour some dough, then distribute the currants evenly and cover with the remaining dough. Bake for about 45 minutes.

You can sprinkle Blackcurrant Pie with icing sugar or chocolate topping before serving.
