Author Notes

Matcha or Green Tea has been my favorite flavor of ice cream for a long time but until recently I did not know it is actually quite easy to make the matcha ice cream at home. This is a recipe I learned from the owner of popular Japanese restaurant in my neighborhood. —Rie

What You'll Need
  • 2 tablespoons Matcha Powder
  • 1 cup Heavy Cream
  • 2 Egg Yolks
  • 4 tablespoons Sugar
  • 2 tablespoons Hot Water
  • Whipped Cream(for decoration)
  1. Melt the matcha powder and sugar in the hot water. Be sure to mix thoroughly to avoid any lumps.
  2. Add the egg yolks in the melted green tea and mix well until you get smooth texture.
  3. Add the heavy cream and mix well.
  4. Pour the matcha cream in a freezer-proof container and cool it in a freezer for about an hour.
  5. Take out the container from the freezer and stir the half-frozen mathca ice cream gently.
  6. Put the container back in the freezer and cool it for another 1.5-2 hours until it becomes nice frozen matcha ice cream.
  7. Serve with decorations.
