One of the reasons why I love summer is abundance of summer veggies and fruits, like juicy tomatoes, soft skin zucchini, crunchy cucumbers, fragrant peaches and sweet watermelons. I love to create light, simple and beautiful looking dishes using those veggies and fruit. This salad is one of my favorites because of its simplicity, balance and flavor. —Madona Giorgadze

Ingredients

4 cups
watercress, or arugula

peaches

1/4 cup
crumbled feta, or blue cheese

1/4 cup
toasted walnuts, or pine nuts

1 tablespoon
balsamic vinegar

1 tablespoon
pomegranate molasses

1 tablespoon
olive oil
Directions

The salad is very easy to put together. We just need to grill the peaches. Just cut the peach in half, discard the pit and place them on hot grill. It takes about 8-10 minutes to get nice grill marks and caramelize the peaches. Put them aside and let them chill.

Next mix pomegranate molasses and balsamic together. If you have a good quality balsamic reduction that is thick, you can use it, as it's sweet and has that tang that we need for the salad. Add olive oil and mix well.

Now that we have our grilled peaches cooled down, cut them into bite size pieces. Build the salad: place the salad leaves on the plate, add feta, peaches, walnuts, drizzle the dressing and that's it, simple, beautiful and delicious.
