Mango Picco deĀ Gallo

This is one of the easiest recipes to prepare. It is a summer, seasonal variation on traditional pico de gallo recipes. It makes a great snack or appetizer served with chips or it can be a topping on any taco or fajita. —Henrie Marie

What You'll Need
  • 2 Mangos - peeled and diced
  • 1/2 cup English cucumber - diced
  • 1/2 cup Firm grape tomatoes - diced
  • 1/2 cup Mixed peppers - chopped (I used mixed mini sweet peppers and half of jalapeno)
  • 2 tablespoons Cilantro - chopped
  • 1 Scallion (green onion) - chopped
  • 1 Medium/large lime juiced - use 2 limes if they are small
  • 1/2 teaspoon Sea salt
  • 1/2 teaspoon Ground black pepper
  1. Gather and prepare all your ingredients. Place all ingredients in a large mixing bowl and mix well. Transfer into a serving dish.
