Grilled anchovies with tomatoes, parsley, thyme, lemon juice… dressing.
Incredible fresh and delicious, use sardines or red mullet fillets if you like them more and enjoy it! — RootsandCook
Ingredients

500 grams
fresh anchovies, cleaned and cut in half

1 piece
large tomato
-
1 piece
garlic clove
-
1 tablespoon
chopped fresh parsley

1/2 teaspoon
fresh thyme

1/4 cup
lime juice
-
2 tablespoons
lemon juice
-
2 tablespoons
olive oil
-
1/2 teaspoon
sea salt

1/4 teaspoon
black pepper
Directions

In a large skillet or grill pan heat 1/4 teaspoon olive oil.

Working in batches lay flat the anchovies in the skillet, skin side up first. Cook for 1 minute on each side and transfer to a platter.

Fresh summer dressing: Cut the tomato into small cubes and place it in a bowl.

Finely chop or grate the garlic and place it in the bowl with the tomato.

Add the parsley, thyme, lemon and lime juice, olive oil, salt and pepper. Mix well.

Pour it over the grilled anchovies and serve with lime slices. Enjoy!
