This is mostly a recipe for summer, light food generally and very delicious and healthy if cooked well.
A)INGREDIENTS
-5 Fresh Aubergines
-3 fresh tomatoes or a tin of tomatoes to smash, instead
-1 pinch parsley -1 pinch mint
-3 onions
-2 pinches garlic
-5 tablespoon olive oil
-salt and pepper
B)PREPARATION
-We cut the aubergines, each aubergine to two pieces, in the middle after washing them well
-We smash the tomatoes in blender, or we use tomatoes of tin: We put them in a casserole, with some water, put five teaspoonful olive oil, salt and pepper, we let them boil well to the end
-In the meantime we fry the cut aubergines in slow fire, by not letting them get fried too much, a bit more than 'half fried',then we remove them from pan on stove and put them in a deep big plate of rectangular form of glass,
-we add the prepared tomatoes as above
-we cut one pinch parsley and one pinch mint
-we cut an onion in small pieces and add to them, by arranging the pieces evenly on aubergines
-we do same with smalll pieces of garlic and add them evenlyon aubergines as onions
-we pour additional olive oil on aubergines, evenly too
-we add some more salt and pepper on whole plate of glass of food
-we add, grained white cheese all over aubergines
->>We bake in the oven till food is well done and cheese is melt
We serve usually with cold beer, Good Appetite —Aikaterini Katapodi
