WHAT: A sweet-tart-spicy-crisp salad, with our new favorite vegetable.
HOW: Chop your kohlrabi and apple, then toss with the dressing.
WHY WE LOVE IT: We're big fans of the crazy-looking kohlrabi, and this salad is something special; the chili gives it a great hit of spice, and the apple, vinegar, and fish sauce keep it crisp and balanced.

Ingredients
  • 1 head kohlrabi
  • 1/2 apple, such as Gala
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1/2 bird's eye chili
  • 1 pinch cumin
  • 1/2 teaspoon fish sauce
  • 3 tablespoons chopped cilantro
  • Salt & freshly ground pepper to taste
Directions
  1. With a sharp knife, cut off the “branches” of the kohlrabi. Peel it with a vegetable peeler.
  2. Cut the kohlrabi into matchsticks either using a sharp knife of a mandolin (I used the latter). Do the same with the apple.
  3. Toss the kohlrabi and the apple with the remaining ingredients and chill before eating.

Wondering if this means regular sesame oil or toasted sesame oil...and what others used?

Hi Kimberly! I always use toasted sesame oil for this dish (or anytime that sesame is called for actually) and it was lovely :) I hope you make the dish and enjoy it.

Thanks for the quick reply, Anita! I didn't have so I toasted some sesame seeds and threw them in, and used safflower oil in the dressing. I really loved this!

Great combo! I make the same salad with jicama in place of kohlrabi. Will try with kohlrabi for sure.

Thank you for sharing this! This recipe has become my go-to way to use up the kohlrabi from my CSA. I've been using a squirt of sriracha instead of the chili, pears instead of apples, and adding a pinch of sugar to the dressing. Sometimes I use Asian 5 Spice powder instead of the cumin, too.

My mom bought me a huge kohlrabi so I googled a few recipes. Found this and absolutely loved it (I actually just made another batch). It's so light and refreshing! I think next time I'll throw in some scallions and maybe try some asian pear.

I've been making this nonstop since I discovered it a couple of weeks ago. I added radish and sometimes scallion to the mix, and I've swapped in pear for apple. Increased the fish sauce as well. It's such a nice fresh addition to the winter vegetables soups and stews currently on my table.

This is now my favorite way to consume apples and kohlrabi. I used a hot red pepper from my CSA, barely added any heat, so as I'm making it now (again in the same week) I'm going to try more heat. Looooved this recipe.

I often see kohlrabi in the farmers' market but didn't really know what to do with it. These flavors looks really good, so I'm going to give this a try.

Very refreshing and lovely salad. Using a mandolin to cut the apples is a great idea for presentation.
