Instead of batching a bunch of simple syrup that you may never use, this recipe makes the exact amount required for a single cocktail. Once the rosemary syrup cools, add it to a Collins glass filled with ice and top with Fever Tree Tonic, Ketel One, and garnish with lime and a rosemary sprig.
Make the rosemary simple syrup: Add the sugar, water, and 1 rosemary sprig to a small pot set over medium-high heat. Whisk until the sugar has dissolved and the water is simmering, about 1 minute.
