Pairing a clear spirit with tonic is among the dynamic duos of the food and beverage world. This combination is ultra-reliable, and like a best friend or a little black dress: it’ll never let you down. There’s certainly something to be said for not messing with a good thing—a straight up vodka tonic is delicious as is. But if you want to add an extra twist to your go-to cocktail, try this Rosemary Vodka Tonic that gets its flavor from homemade rosemary simple syrup and expertly crafted Ketel One Vodka.

Instead of batching a bunch of simple syrup that you may never use, this recipe makes the exact amount required for a single cocktail. Once the rosemary syrup cools, add it to a Collins glass filled with ice and top with Fever Tree Tonic, Ketel One, and garnish with lime and a rosemary sprig.

Ingredients
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 2 fresh rosemary sprigs, divided
  • 1 1/2 ounces Ketel One Vodka
  • Fever Tree Tonic
  • 1 lime wedge
Directions
  1. Make the rosemary simple syrup: Add the sugar, water, and 1 rosemary sprig to a small pot set over medium-high heat. Whisk until the sugar has dissolved and the water is simmering, about 1 minute. Strain the simple syrup through a fine mesh sieve into a container and let cool to room temperature. Discard the rosemary sprig.
  2. Make the cocktail: Add the vodka and the rosemary simple syrup to a Collins glass and fill with ice. Top off the glass with Fever Tree Tonic and garnish with the lime wedge and remaining sprig of rosemary. Serve right away.
