This is a fool proof way to make a tangy spicy anchovy packed caesar dressing in less than 10 minutes. I love my immersion blender for this.
Top quality ingredients are a must here, farm eggs, aged parmesan - freshly grated, great olive oil and really good anchovies - even the garlic should be bright and fresh. —wingirls

Lemon squeezed

Olive Oil

Anchovies

Worcestershire sauce

Dijon Mustard

Fresh garlic clove

Freshly grated parmesan to taste

2-3 heads of Romaine cut on the bias
Directions

Put all the ingredients in a container suited for your immersion blender - I like a largish Ball jar. It is important that the ingredients are GREAT. Farm fresh eggs, good quality parmesan, fresh garlic.

Immerse for 20 plus seconds. Taste, adjustments encouraged - more lemon? more EVOO? All depends on what you like. We like a LOT of anchovies. Maybe 6 or 7.

Toss on whatever lettuce you like - we like a traditional Romaine cut on the bias.

Toss lettuce with dressing and add in more parmesan and more pepper.
