Indulgent and deliciously simple, these Caramelized Bananas with Raspberries take advantage of those pesky spotted bananas on your counter! This dish is perfect as a healthy dessert and light enough to serve at brunch. Recipe originally from my blog post: https://thekitchendivision.com/caramelized-bananas-with-raspberries/

What You'll Need
Ingredients
  • 1 large ripe banana (spotty is best)
  • 1/2 cup whole milk yogurt (plain or vanilla)
  • 1 handful fresh raspberries
  • 1 tablespoon slivered almonds
  • 1 teaspoon butter
  • 1 teaspoon powdered sugar, optional
Directions
  1. Peel the banana and cut it into quarters lengthwise, so you have long flat spears.
  2. Melt the butter in a nonstick pan over medium-high heat. Add in the banana quarters, flat side down.
  3. Add the almonds and shake the pan gently to coat them in butter.
  4. Cook the bananas for 3 minutes on each side until golden brown and caramelized. The bananas will be soft so take care not to break them too much.
  5. Remove the bananas from the pan and plate them. Pour the toasted almonds over the top of the bananas.
  6. Top the bananas with yogurt and raspberries. Dust with powdered sugar if desired.
