Ingredients
  • 2 cups all purpose flour, sifted
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup ricotta cheese
  • 2 eggs
  • 1/4 cup vegetable oil
  • 3/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 1/4 cups diced strawberry
  • powder sugar
Directions
  1. Preheat oven to 350 degrees. Line 12 muffin cups with cupcake liners
  2. In a bowl combine flour, sugar, baking powder, and salt. In a medium bowl, whisk ricotta cheese until smooth. Add eggs and sour cream and whisk until smooth. Add oil and vanilla extract, and mix until combined. Add the ricotta mixture into the flour mixture and fold with a rubber spatula. fold in diced strawberries.
  3. Divide batter evenly between muffin cups. Bake for 15-20 minutes or until a toothpick inserted into the center of a muffin comes out clean
  4. After it cools off sprinkle the top with powder sugar
