What You'll Need
  • 2 cups all purpose flour, unbleached
  • 2 cups milk
  • 2 eggs
  • 2 tablespoons butter, melted
  • 1 tablespoon vanilla
  • 1/2 teaspoon salt
  • butter, for cooking
  1. In a small bowl, whisk the eggs. Add the vanilla, melted butter, and milk.
  2. In a large bowl, sift the flour and salt. Add the egg mixture slowly to the flour, stirring until free of lumps.
  3. Heat butter in an 8 or 10-inch skillet over medium heat. Pour 1/3 to 1/2 cup of the batter into the pan.
  4. Fry until the top is dry and the edges start separating from the skillet, about 2 minutes.
  5. Flip and fry for 1-2 minutes more, until golden. Transfer to servings plate.
  6. Repeat steps 3-5 until all of the batter is used.
  7. Sprinkle with brown sugar and cinnamon, roll, and serve.
  8. Optional: drizzle with either melted chocolate or honey, and serve with fresh fruit on the side.
