Wagyu Steak with Charred Green Garlic and Radish Salad

Wagyu eye of round steaks are marinated in a flavorful mix of charred green garlic, garlic, vinegar, mustard, honey, lemon, oil, salt, and black pepper. The steaks are grilled, sliced, and served over an asparagus and radish salad that has been tossed in the charred green garlic dressing. Try this tasty recipe today! —Double8Cattle

Ingredients
  • 2 Double 8 Cattle Company Fullblood Wagyu Eye of Round Steaks
  • 4 cups or 12 OZ Spring Salad Mix
  • 2 Medium-Size Watermelon or Pink Radishes (peeled, sliced thin)
  • 1 bunch Asparagus (woody ends trimmed off)
  • 1 bunch Green Garlic
  • 1 Garlic Clove (minced)
  • 1/2 cup Champagne Vinegar
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Honey
  • 2 cups Olive Oil
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 1 Lemon (juiced)
Directions
  1. Tools - Gas Grill or Grill Pan for Stovetop, Blender, Large Bowl, Small Bowl, Pie Pan
  2. FIRST STEP Take the Fullblood Wagyu eye of round steaks out of the freezer, and place it in the refrigerator 24 hours before starting this recipe.
  3. PREPARING THE DRESSING/MARINADE Heat a grill or grill pan over medium-high heat for 10 minutes. Trim the roots off of the green garlic, and place the green garlic on the grill. Grill for 2 minutes to wilt the green garlic and give the ends a little char. Remove it from the grill, and roughly chop. Place the charred green garlic, minced garlic, Champagne vinegar, Dijon mustard, honey, kosher salt, black pepper, and lemon juice in the blender. Blend the ingredients until smooth. Then take out the center hole out of the blender lid, and slowly drizzle in the olive oil until combined. Season with kosher salt and freshly ground black pepper as desired. This is your dressing and marinade.
  4. PREPARING THE ASPARAGUS AND RADISHES Toss the trimmed asparagus in a 1/4 cup of the dressing, and place it on the grill. Grill for 3 minutes, and then take it off the grill (or grill pan). Once cool, slice the grilled asparagus into bite-size pieces, and place it in a large bowl. Peel and slice your radishes, and place them in the bowl with the asparagus. Add the spring salad mix to the bowl as well. This is your salad.
  5. PREPARING THE WAGYU STEAKS In a small bowl or pie pan, place 1 cup of the marinade and the Wagyu eye of round steaks. Massage the marinade into the steaks, and allow them to sit in the marinade for 1 hour. Heat a gas grill or grill pan over medium-high heat for 10 minutes. Once the grill is hot, place the marinated Wagyu steaks on the grill. Grill the steaks for 4 minutes per side. If using a grill pan on the stovetop, grill for 6 minutes per side. Once the Wagyu eye of round steaks are grilled, place them on a cutting board. Allow the steaks to rest for 10 minutes. Then, slice the steaks against the grain.
  6. FINAL STEPS Dress the radish and asparagus salad with your charred green garlic dressing. Place the sliced Wagyu steak over the dressed greens. Serve immediately, and enjoy!
