Ingredients

6 ounces
Pickled ginger

8 ounces
Halibut
-
1 cup
Corn Starch
-
Salt and Pepper

2 tablespoons
Mayonaise

2 teaspoons
Chili Garlic Sauce
-
Baguette
-
3 sprigs
Cilantro
-
Jalapeno- Sliced
-
Cucumber- Sliced

Oil for frying
Directions

Heat the oil to 350

Dredge the pickled ginger slices in the corn starch. Add the ginger slices to the heated oil, do this in batches to not over crowd the pan. Once browned drain on paper towels.

Cut the Halibut into 3 inch pieces. Season with salt and pepper. Dredge in cornstarch and fry in the same pan as the ginger. Add more oil if needed. Once well browned remove to drain on paper towels.

In a small bowl combine the Mayonnaise and Chili Garlic Sauce.

Slice the Baguette. Smear the Mayo/Chili Sauce on both sides of the bread. Fill with the Halibut and Ginger Chips. Top with sliced Jalapeno, Cucumber and Cilantro.
