Ingredients

Canned or Frozen Corn

8.5 tablespoons
Olive Oil (divided)

Broccoli or cauliflower (chopped)

Green Beans (chopped)

Cilantro

Smoked Paprika

1/2 teaspoon
caraway

1/2 teaspoon
cumin

1/2 teaspoon
coriander

3/4 teaspoon
salt

Cloves of garlic (minced)
Directions

preheat oven to 430 F.
mix Paprika, Minced Garlic, Caraway, Cumin, Coriander and Salt with 2.5 tablespoons olive oil. Set aside.

Mix the corn with 2 tbsp olive oil and a pinch of salt. Spread out on half a baking tray.

In a large bowl mix paprika paste with the cream and chopped broccoli. Spread the broccoli and sauce on the other half of the baking tray. Bake for 10-12 minutes.

Cook couscous per package instructions (I usually use pearl couscous). When you add the couscous to the water also add the chopped green beans.

mix the couscous and corn, divide this mixture up between plates, then top with broccoli, remaining sauce and cilantro.
