Chocolate Chip Muffins

This recipe is perfect for non-vegans and vegans! The 2 eggs can be substituted for 2 tablespoons of flax meal and 6 tablespoons of water. Any oil/milk can be used. This is a perfect recipe for beginners and super easy to make! Enjoy! —SloanieBakes

What You'll Need
  • 2 1/4 cups Flour
  • 1 cup Milk
  • 1/2 cup Coconut Oil
  • 3/4 cup Sugar
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 2 teaspoons Baking Powder
  • 3 tablespoons Chocolate Chips
  • 2 Lemons
  1. Add the flour, sugar, salt, and baking powder into a large bowl. Then mix it all together by hand with a whisk.
  2. Add the eggs, vanilla extract, milk, and coconut oil into a medium-sized bowl. Next, use a whisk to mix it all together.
  3. Add all of the wet ingredients into the large bowl containing the dry ingredients. Mix until combined.
  4. Zest the lemons and then squeeze the juice into the batter. Then, add the zest and chocolate chips. Gently mix until all the ingredients are combined.
  5. Preheat the over to 350 F and scoop the batter into 12 lined muffin cups. Bake for 25-30 minutes.
  6. When the muffins are done baking let them cool for 7-10 minutes. Then enjoy!!
