Pasta with no-cook spicy tomato sauce. Ricotta, sun-dried tomatoes and harissa are some of the ingredients you need for this easiest no-cook sauce. It’s creamy and bright with just the right amount of heat. We prepare the sauce while the pasta is cooking so everything is ready in just 15 minutes! Ingredients
  • 11 ounces pasta
  • 7 ounces sun-dried tomatoes
  • 2 large garlic cloves, smashed
  • 2 tablespoons toasted pine nuts
  • 1/2 teaspoon each: salt, black pepper, dried oregano
  • 9 ounces ricotta
  • 2 ounces grated parmesan, more for serving
  • 2 tablespoons harissa paste, or your favorite chili paste
  • 20 large basil leaves
Directions
  1. Cook the pasta al dente in generously salted water. Drain, reserving 1 cup cooking water.
  2. While the pasta is boiling, prepare the tomato sauce.
  3. To your food processor, add the remaining ingredients. Blend until finely chopped.
  4. When the pasta is ready, add the prepared sauce and ½ cup cooking water. Toss to combine. Add more cooking water, if needed. Taste and adjust salt.
  5. Serve warm or at room temperature with a big side salad. Enjoy!

Really delicious and so easy. I used 11 ounces of mezzi rigatoni and had enough sauce left over for maybe another 2-3 ounces of pasta.
