Zucchini Ribbon Salad

Raw vegetable summer salad —Jon@52

What You'll Need
  • 1 zucchini, shaved
  • 1 summer squash, shaved
  • 1/2 seedless cucumber, thin sliced
  • 2 radishes, thin sliced
  • 1 clementine, pealed and sliced
  • 1/4 cup toasted pine nuts
  • 2 tablespoons fresh mint, julienne
  • 1 tablespoon honey
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh squeezed lemon juice
  • 3 ounces goat cheese
  • 1 teaspoon fresh chives, chopped
  • 1 teaspoon maldon salt
  • 1/2 teaspoon fresh ground pepper
  1. with a vegetable peeler, peel the zucchini and summer squash lengthwise and arrange on a plate randomly
  2. slice the seedless cucumber into thin rings and arrange on the same plate randomly
  3. clean and slice the radishes into thin rings and arrange on the plate randomly
  4. toast the pine nuts in a small pan on the stove with no oil for a couple minutes until lightly toasted, let cool and sprinkle on the plate
  5. peel the clementine and slice into 1/4 inch rings and place on the plate
  6. julienne the fresh mint and sprinkle over the plate
  7. whisk the lemon juice, good quality olive oil and good quality honey and pour over the vegetables
  8. take marble sized pieces of the goat cheese and sprinkle over the salad
  9. finish with the chopped chives, maldon salt and fresh ground pepper
