Ingredients

zucchini, shaved

summer squash, shaved

1/2
seedless cucumber, thin sliced

radishes, thin sliced

clementine, pealed and sliced

1/4 cup
toasted pine nuts

2 tablespoons
fresh mint, julienne
-
1 tablespoon
honey
-
3 tablespoons
extra virgin olive oil
-
2 tablespoons
fresh squeezed lemon juice

3 ounces
goat cheese
-
1 teaspoon
fresh chives, chopped

1 teaspoon
maldon salt
-
1/2 teaspoon
fresh ground pepper
Directions
-
with a vegetable peeler, peel the zucchini and summer squash lengthwise and arrange on a plate randomly
-
slice the seedless cucumber into thin rings and arrange on the same plate randomly
-
clean and slice the radishes into thin rings and arrange on the plate randomly
-
toast the pine nuts in a small pan on the stove with no oil for a couple minutes until lightly toasted, let cool and sprinkle on the plate
-
peel the clementine and slice into 1/4 inch rings and place on the plate
-
julienne the fresh mint and sprinkle over the plate
-
whisk the lemon juice, good quality olive oil and good quality honey and pour over the vegetables
-
take marble sized pieces of the goat cheese and sprinkle over the salad
-
finish with the chopped chives, maldon salt and fresh ground pepper
