This summer salad is simple, fresh and sweet! Enjoy with your favorite protein for a complete dinner salad.

What You'll Need
Ingredients
  • 16 ounces Sliced Strawberries
  • 1 Diced Avocado
  • 1/2 cup Shredded Mint Leaves
  • 4 ounces Honey Goat Cheese
  • 1/4 cup Chopped Salted Almonds
  • 10-12 ounces Mixed Greens
  • 1/4 cup Freshly Squeezed Lemon Juice
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Honey
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
Directions
  1. To prepare salad, place greens in a large bowl, top with strawberries, avocados, mint, goat cheese and almonds.
  2. To prepare vinaigrette, in a small bowl, whisk ingredients together until combined. Pour vinaigrette over salad just before serving and toss.
  3. *1/4-1/2 cup of quinoa or farro is a great addition for more texture!
