This summer salad is simple, fresh and sweet! Enjoy with your favorite protein for a complete dinner salad.

Ingredients

Sliced Strawberries

Diced Avocado

1/2 cup
Shredded Mint Leaves

4 ounces
Honey Goat Cheese

1/4 cup
Chopped Salted Almonds

10-12 ounces
Mixed Greens

1/4 cup
Freshly Squeezed Lemon Juice

1/4 cup
Extra Virgin Olive Oil

2 tablespoons
Dijon Mustard

2 tablespoons
Honey

1/2 teaspoon
Salt

1/2 teaspoon
Pepper
Directions

To prepare salad, place greens in a large bowl, top with strawberries, avocados, mint, goat cheese and almonds.

To prepare vinaigrette, in a small bowl, whisk ingredients together until combined. Pour vinaigrette over salad just before serving and toss.

*1/4-1/2 cup of quinoa or farro is a great addition for more texture!
