Ingredients

sugar free maple flavor syrup, Maple Grove Farms

1/2 cup
heavy whipping cream

1 1/4 cups
ricotta cheese, whole milk

1/2 cup
mascarpone cheese

1 1/2 cups
fresh granny smith apple, sliced

butter, unsalted

cinnamon, ground

Set aside 1 tablespoon sugar free maple syrup for step 4. Place the remaining syrup into a small saucepan. Bring to a simmer over medium high heat, then reduce heat to simmer for 5 minutes, until syrup is slightly reduced. Set aside to allow to cool.

In a small bowl, use a hand mixer to whip the heavy cream to stiff peaks. Set aside.

In a large bowl, use the hand mixer to combine the ricotta and mascarpone until combined and creamy. Add in cooled sugar free syrup (from step 1) and mix again until well combined. Fold in the whipped cream and refrigerate until ready to assemble the parfaits.

Chop apple. In a medium skillet over medium heat melt the butter. Add the apples and top with reserved tablespoon maple syrup, cinnamon and salt. Sautee, stirring regularly, until apples are tender, about 5 minutes.

To assemble the parfaits, evenly divide sautéed apples into the bottom of 6 small cups, about 2 tablespoons in each. Top with even amounts of chopped bar (about 1/3 bar or 13g in each), then layer 2/3 cup maple ricotta mousse.

If desired, garnish with some withheld apples and bar and refrigerate until ready to serve. One parfait is one serving.
