My abuela's recipe is perfect for the holidays. These potatoes go very well with steaks, broiled or grilled, and also with baked chicken. —ClaritasCocina2023

Ingredients

medium potatoes

1 teaspoon
salt

1/4 pound
butter

2
egg yolks
-
1/4 cup
light cream
-
pinch of nutmeg

1/2 teaspoon
white pepper

3 tablespoons
melted butter
Directions

Cook potatoes with their jackets about 45 minutes. Peel while hot and force through sieve into a mixing bowl

Add salt and half of the butter. Beat until butter melts. Add remaining butter and beat until no trace of it appears and the potatoes are smooth.

Beat 1 egg yolk at a time. Combine cream, nutmeg, and white pepper. Add gradually to potatoes, beating until light.

Grease cookie sheet generously. Use a size 4-pastry tube and fill sheet with the mashed potatoes.

Make rosettes, about 2 1/2 inches in diameter, on the cookie sheet. Dribble melted butter over each rosette and place under slow broiler to brown beautifully.

P.S.: If you do not have a pastry tube, use a spoon and form a design of your liking.
