My abuela's recipe is perfect for the holidays. These potatoes go very well with steaks, broiled or grilled, and also with baked chicken. —ClaritasCocina2023

What You'll Need
Ingredients
  • 6 medium potatoes
  • 1 teaspoon salt
  • 1/4 pound butter
  • 2 egg yolks
  • 1/4 cup light cream
  • pinch of nutmeg
  • 1/2 teaspoon white pepper
  • 3 tablespoons melted butter
Directions
  1. Cook potatoes with their jackets about 45 minutes. Peel while hot and force through sieve into a mixing bowl
  2. Add salt and half of the butter. Beat until butter melts. Add remaining butter and beat until no trace of it appears and the potatoes are smooth.
  3. Beat 1 egg yolk at a time. Combine cream, nutmeg, and white pepper. Add gradually to potatoes, beating until light.
  4. Grease cookie sheet generously. Use a size 4-pastry tube and fill sheet with the mashed potatoes.
  5. Make rosettes, about 2 1/2 inches in diameter, on the cookie sheet. Dribble melted butter over each rosette and place under slow broiler to brown beautifully.
  6. P.S.: If you do not have a pastry tube, use a spoon and form a design of your liking.
