This is a nice, light food, mostly for summer, but can also be cooked in all seasons,as peas can be bought either at groceries as fresh, in meditarranean countries, mostly in summer, or you can buy peas in a plastic bag directly from Super Market. There are many ways to cook:
A) INGREDIENTS:
-One bag of green (frozen) peas from Super Market
-Two potatoes mid-size
-A tin of tomato juice
-One onion
-One piece zucchini
-One tea spoonful sugar
-Salt, pepper
-Balsamico, or white wine (optional)
-one carrot
-Olive oil of course
-B)PREPARATION
-We put the peas from plastic bag in a big or middle size casserole
-We put the tomato juice of relative tin
-We cut the potatoes into cubes, along with the carrot, to very small round pieces and zucchini.
-We mix at this stage
-We add three tablespoonful olive oil
-then we add salt
->>At this stage we let the mix boil well enough but not yet well done.
-We taste the food with a spoon or fork, to see, whether it's half done for ex.
-then, before it gets well done, we add one-two more tablespoonful olive oil, then add some more salt, pepper, one teaspoonful sugar, and in the end we pour some balsamico (we buy this directly from super market), or half small glass of white wine, by mixing further.
-We let all this get well done,
Usually served with cold beer or cola etc in summer, but also spring etc —Aikaterini Katapodi
