Ingredients

Chicken Rice-A-Roni

1/2 cup
Celery

1/4 cup
Onion

1 teaspoon
Poultry seasoning

2 packets
Sliced water chestnuts

Butter

2 1/2 cups
Water or Broth

1 tablespoon
Garlic (optional)
Directions

Open Rice-A-Roni package and take out the seasoning mix. Open the two cans of sliced water chestnuts (can add more or less according to taste and/or dice them)

Slice celery. Dice onion. Slice or dice mushrooms. Mince garlic if using.

Sautee onions and mushrooms until almost done in ~2 Tbsp butter (or oil substitute). Add garlic about a minute before end.

Add the remaining 2 Tbsp butter to pan and brown the Rice-A-Roni as directed.

Add the remaining ingredients, including the spice package that came with the Rice-A-Roni. Follow cooking times on the box as listed.

Note:
You can substitute chicken broth for some or all of the water.
If you do not like mushrooms can leave them out and skip sautee step and/or use a can of mushrooms.
Add other vegetables such as carrots, peas, or bell peppers as you would like.
Ingredients do not need to be precise so add more or less as you like.
If it is still too wet in the end, remove lid and simmer a little longer.
You can use a different flavor of Rice-A-Roni, including wild rice, if you do not want chicken.
It reheats very well so you can make it ahead and reheat in the oven or the microwave.
