Directions

Cut the zucchini into cubes and the red onion into rough wedges.

Place in an oven-proof dish.

Top with cherry tomatoes and coarsely chopped garlic.

Pour over a good-quality olive oil.

Dice the cod into cubes.

Season with salt and pepper and top with the cod.

Bake in the oven at 200 degrees for about 20 minutes.

Top with crumbled feta cheese and oregano.

Serve with tzatziki and fresh crusty bread.
