Ingredients
  • Lemon Loaf
  • 1 cup granulated sugar
  • 1/2 cup oil
  • 3 eggs
  • 3/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Lemon Glaze
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
Directions
  1. Preheat oven to 350 degrees. Grease a loaf pan. Set aside.
  2. Using a stand mixer, beat together oil and sugar. Add in eggs, sour cream, vanilla extract, lemon juice, and lemon zest. Beat well.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Add dry ingredients to the mixer. Beat until just combined.
  4. Pour batter into prepared pan. Bake for 45-50 minutes.
  5. To make the glaze, whisk together powdered sugar and lemon juice. Pour glaze over cooled loaf.
  6. Store at room temperature in an airtight container.
