Fried Bologna Sandwich

Bologna like you've never experienced.

If you've been to the spring festival Tulip Time in Pella, Iowa, you've heard of and experienced the infamous bologna sandwich. It comes around only 3 days a year, so you're left with the remaining 362 days of the year to recreate its goodness. It's simply fried bologna and gouda cheese. Why is it so popular?! It's tried and true... a touch of Holland... and filled with nostalgia.

The great part of this recipe is that it's not really a recreation... rather it grew up, and graduated into a new identity. Additional toppings, added flavors, and new textures recreate the old classic into a modern sandwich marvel. —Eten en Voeden (Eat & Feed)

What You'll Need
Ingredients
  • 1 Sandwich Bun
  • 1 tablespoon Butter
  • 5-7 pieces Pella Bologna
  • 1 tablespoon Mustard
  • 2 pieces Pepper Jack Cheese
  • 1 Egg
  • 3-5 Kettle Chips
Directions
  1. Butter sandwich bun and toast until golden brown.
  2. Heat up a cast iron pan to medium-low heat.
  3. Slice bologna 1/4” thick (5-7 pieces)
  4. Lay out your bologna individually and fry for about 3-5 minutes on each side, or until they've browned.
  5. Place fried bologna on the toasted bun. Immediately add 1 slice of pepper jack cheese on top. Adding the cheese while the bologna is still hot allows time to melt while you prepare the rest of the sandwich.
  6. With an already hot cast iron skillet, crack and fry one egg. Season with salt and pepper. Once the first side has browned, flip the egg and add the other slice of pepper jack cheese. Allow the cheese time to melt while the other side of the egg fries.
  7. Once the egg is done, stack it on top of the fried bologna and melted cheese.
  8. Lather a generous amount of mustard on top side of bun.
  9. Add the kettle chips to the sandwich for some added crunch.
