This bright golden chicken stew is a one pot wonder. It’s casual and quick enough for a weeknight meal but is easily elegant enough for hosting a dinner party. Naturally gluten and dairy free, this stew is a perfect crowd pleaser, not to mention kosher for passover. It’s packed with big warm spices like turmeric, cinnamon and cumin. It tastes healthy and indulgent all at once. Serve it on a bed of couscous, rice or eat it alone. I like to garnish with some fresh parsley, and toasted almonds.

Ingredients

1 teaspoon
salt

bone-in skin on chicken thighs

bone-in skin on chicken legs

2 tablespoons
olive oil

cooking onions, thinly sliced

cloves garlic, peeled and smashed

1/2 cup
dry white wine

1 tablespoon
ground turmeric

1 tablespoon
ground cumin

cinnamon stick

1
star anise
-
1 teaspoon
coriander seed

1 cup
cherry tomatoes

small naval oranges, sliced in half

1 cup
chicken stock
-
1 cup
dried apricots
-
1/2 cup
chopped parsely

1/2 cup
toasted almonds, chopped or sliced
Directions

Season chicken legs and thighs with salt

In a dutch oven or heavy bottomed pot, heat oil over high. Sear the chicken thighs and legs until golden brown on all sides, about 8 minutes. Work in batches if necessary.
Remove chicken from pan and place on a plate.

Lower heat to medium. Add in garlic and onion slices. Cook until fragrant and translucent, about 3 minutes.

Add in white wine. Using a wooden spoon scrape up the brown bits stuck to the bottom of the pan. Stir in the turmeric and cumin. Cook while stirring until the liquid gets cooked out, about 5 minutes.

Add the browned chicken back to the pot. Add the tomatoes, the anise, coriander seed, and cinnamon.

Pour in the chicken stock or water. Squeeze the oranges the place then nestle the halves between the chicken pieces.
Reduce heat to low. Cover pot and let cook undisturbed for 1 hour.

Add in dried apricots and continue to cook for an additional 20 minutes.

Garnish with fresh parsley and toasted almonds
Serve on couscous, potatoes, rice or crusty bread or eat alone.
