In a mixing bowl, combine the dry ingredients. In a separate bowl, whisk together the wet ingredients until combined. Add the wet ingredients to the dry ingredients and mix until just combined and no lumps remain. Set the batter aside for 10 minutes to rest.
In a large skillet, heat the oil over medium-high heat. Using a ¼ cup measure, potion out 4 to 5 cakes into the oil, keeping them separate. Fry until the cakes begin to bubble on top, about 4 minutes. Flip and cook another 4 to 5 minutes, or until golden brown and cooked through. Transfer to a paper towel-lined plate or wire rack. Repeat with the remaining batter. Serve warm with butter, syrup, or other sides.
