Quick Hungarian Cabbage Stew

Ingredients
  • One large quarter of white cabbage soaked in salt water and sliced thickly
  • One large capsicum ripped into large chuncks and deseeded
  • One large brown onion sliced diagonally
  • Four garlic cloves cut into large quarters and sliced
  • 1/2 teaspoon Salt
  • 1 pinch Black pepper
  • 1 teaspoon Paprika
  • Three bay leaves
  • One medium handfull of flat leaf parsley thinly sliced
  • One medium whole lemon cut in half
  • One small cup of water (more when needed)
  • 3 tablespoons Olive oil
Directions
  1. Heat a medium sized deep pot at medium heat. Add one cup of water and add the oil, onion and garlic in when the water starts to bubble. Add the cabbage in when the onion and garlic becomes soft.
  2. Get out a food processor and process the capsicum until it becomes a puree and add it in the pot with salt, pepper, paprika, bay leaf and parsley. Mix and squeeze the lemon halves in the pot and mix again. Cover and let the cabbage stew cook for 10 minutes or until the vegetables are soft. Mix and add more water when needed.
  3. After the cabbage stew is fully cooked grab a bowl, pour it in and serve. Enjoy. ❤
