Ingredients
  • 1 1 kilogram fresh sea bass, filtered.
  • 1 Lime, juice and zest
  • 1/2 Teaspoon of grated ginger.
  • 1 tablespoon Lemon juice
  • 2 Tablespoons olive oil
  • 1/2 Tablespoon fresh chopped red chilli.
  • 1 Tablespoon sliced radish. Small pieces.
  • 8 Pink peppercorns crushed.
  • Salt
  • 1 Spring onion sliced.
  • Some chopped chive or micro greens.
Directions
  1. Place the filet of fish on a clean board and slice as thinly as possible as fast as possible. Cover with cling film and refrigerate immediately.
  2. Put all the ingredients except the vegetables in a container and shake for a few minutes
  3. 5-10 minutes before serving, pour the sauce over the fish and garnish with the spring onions and greens.
