A play on the classic cocktail, this Stirred Piña Colada was created by Brooklyn bartender Galen Huggins. Unlike the thick, often frozen, drink you'd typically see on pool- or beach-side chairs, this rendition is stirred (no shaker necessary), almost clear, and will leave you pleasantly surprised.
*For the lactic acid solution, Galen suggests skipping it instead of trying to find an alternative, if you're unable to make it at home. “This is to substitute the acidity and creaminess of a regular piña colada [made with lactic acid powder and water],” he explains.
