**Quinoa Salad with Seasonal Vegetables and Fresh Lemon Dressing**

**Ingredients:**
- 1 cup cooked and cooled quinoa
- 1 cup seasonal vegetables (chopped tomatoes, sliced cucumber, shredded carrots)
- 1/2 cup fresh chopped mint
- 1/4 cup pomegranate seeds for garnish

**For Lemon Dressing:**
