Ingredients

600 gram sea bream fillets without skin.

1/2 avocado cut in very small cubes.

1 red chilli cut in tiny pieces.

3 cumquat cut in tiny pieces.

Some coriander leaves chopped.
- Dressing

Juice of 1/2 a lemon.

Zest and juice of one lime.

2 Lemongrass stalks.

sea salt.

Pink peppercorns crushed.
Directions

Cut the sea bream fillets in small cubes, cover and return to fridge until you prepare the rest of the ingredients and make the dressing.

For the dressing, put the lime, lemon juice and lemongrass in a food processor and blitz.
Strain and add the salt and lime zest.

15 minutes before serving mix all the ingredients together with the fish, add the dressing, taking care not to mash the avocado. Sprinkle some pink peppercorns.
