VENEZUELAN HAM BREAD

AS an immigrant for over 32 years in this country it's nice to remember some of the food We eat specially at Christmas's time. in a humble way a offer to you my personal recipe of Ham bread. Thank you All. —winston

Ingredients
  • Dry ingredients
  • 11 ounces APP flour
  • 1 ounce yeast
  • 1 teaspoon salt
  • 2 ounces sugar
  • 3 ounces milk powder
  • Wet ingredients
  • 5 ounces water
  • 1 whole Egg
  • 1.5 ounces soft Butter
  • 1 pound smoked ham
  • 2 cups stuffed with peppers green olives
  • 2 cups dark raisins
  • 2 tablespoons brown sugar
  • 3 slices of bacon
  • 1 egg for the egg wash only the yolk with a tsp of water
Directions
  1. warm the water in the microwave for 1.5 minutes add the sugar and the yeast and let it bloom.
  2. After 5 minutes add to the mixer with the blooming yeast, add the flour and the rest of the ingredients. butter, salt egg and milk powder.
  3. mix it well until you develop the gluten net about 3 minutes with the mixer in 1 and move it to 3 and mix it for about 5 more minutes until you see the dough gets very soft like I babies butt......
  4. take it out of the mixer and let proofing an a warm place for about one hour on a tray, cover it with plastic wrap or in a Zipper bag.
  5. after an hour take it out and roll it on a counter with a rolling pin adding flour to not stick in the counter. roll it to 18x18 inches and add from the edge greed olives on a line from one side to the other.
  6. cover the green olives with the dough and on top add slices of ham the same way from one side to the other and do it for like four lines. add the 3 slices of bacon, the brown sugar, the raisins and the rest of the green olives,
  7. Roll it and put it on a haft sheet pan. brush it with egg wash poke it with a fork all over and bake it at 360 F for 15 minutes open the oven and brush it again. cook it for like 15 minutes more and take it out. let it rest for like 30 minutes and cut it and try..... buen provecho! hope you like it guys.
