I make this easy and delicious carrot creation often. Its great to have in the fridge for a healthy snack and works nicely as a side too. —Susan Rubin

Lemon

1 teaspoon
Dijon mustard

1 teaspoon
Honey

1 tablespoon
Extra Virgin Olive oil

1 tablespoon
chopped herbs
Directions

Using a carrot peeler, peel beautiful long strips and pop them into a bowl

Add the zest of one lemon to the pile of carrot ribbons and toss.

Now make the dressing: whisk together juice of one lemon, Dijon mustard, honey and olive oil. Pour onto carrots and lemon zest and mix well.

Add some chopped herbs and toss. I've used dill, cilantro, parsley. Whatever you like will work well.
