Mug cakes have been popular since 2009. This version (using pancake batter) is easier, simpler and quicker than measuring out many ingredients in very small amounts for one serving. Use a pancake batter made with baking powder (avoid batters with yeast for this cake), some fat or oil spray, and a sweet or savory garnish. Easy and good for breakfast or a snack. —Nancy

batch pancake batter (homemade or from a mix), Avoid batter with yeast as it doesn't last as safely in a sealed container in the fridge.

8 tablespoons
fat or baking spray

4 cups
garnish (fruit, cheese and/or deli meat)
Directions

Mix up the pancake batter and put it into a storage container with a lid. Store in the fridge up to four days.

For each serving, prepare a mug or wide soup bowl with a baking spray or about 1 tbsp. fat.

Line the bottom of the mug/bowl with fruit, some crumbled cheese or a few pieces of deli meat (about 1/2 cup per serving).

If needed, microwave the fruit, cheese or meat for 2 1/2 minutes. Test for doneness, mw a bit more, as needed.

Remove mug/bowl from microwave, top with 1/4 to 1/2 cup batter. Microwave 2 1/2 minutes. Test for doneness, and if needed, cook a bit more.
