Ingredients
  • 2 Filet Mignon steaks - 6/8 ounces each at room temperature
  • Salt and Black Pepper
  • 1 tablespoon Unsalted Butter
  • Fresh Rosemary and Thyme

  1. Preheat your oven to 400°F (200°C).
  2. Season the Steaks: Pat the filet mignon steaks dry with paper towels. Season both sides generously with salt and black pepper. If desired, you can also add fresh herbs like rosemary or thyme.
  3. Sear the Steaks: Heat olive oil over medium-high heat in an oven-safe skillet. Once hot, add the filet mignon steaks and sear each side for about 2-3 minutes or until a golden crust forms.
  4. Add Butter: Add butter to the skillet. Once melted, baste the steaks with the butter using a spoon. This helps to add flavor and keeps the steaks moist.
  5. Transfer to the Oven: Transfer the skillet to the preheated oven. Bake for about 5-10 minutes for medium-rare, depending on the thickness of your steaks. Use a meat thermometer to check the internal temperature. For medium-rare, aim for around 130°F (54°C).
  6. Rest the Steaks: Remove the skillet from the oven and transfer the steaks to a plate. Allow them to rest for a few minutes. This helps the juices redistribute, ensuring a juicy and tender steak.
  7. Serve: Serve the filet mignon steaks whole or sliced, and drizzle with any remaining pan juices. Optionally, garnish with additional fresh herbs.
