  • Lamb chops
  • 4 Lamb Chops
  • 2 tablespoons Olive Oil
  • 3 Cloves of Garlic Minced
  • 1 tablespoon Fresh rosemary
  • Salt and black pepper to taste
  • Carrots
  • 450 grams Carrots - peeled and sliced into cubes
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Turmeric
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
Directions
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper.
  3. Coat the lamb chops with the marinade, ensuring they are well covered. Let them marinate for at least 20 minutes at room temperature.
  4. In a separate bowl, toss the carrot sticks with olive oil, honey, ground cumin, salt, and black pepper until evenly coated.
  5. Spread the seasoned carrots on a baking sheet in a single layer.
  6. Roast in the preheated oven for about 25-30 minutes or until the carrots are tender and caramelized, tossing halfway through.
  7. While the carrots are roasting, heat a skillet over medium-high heat.
  8. Sear the marinated lamb chops for about 3-4 minutes per side or until they achieve a golden-brown crust. Adjust cooking time based on your preferred doneness.
  9. Transfer the seared lamb chops to the oven and roast for an additional 8-10 minutes or until they reach your desired level of doneness.
  10. Allow the lamb chops to rest for a few minutes before serving.
